dinner from yesterday
Sep. 12th, 2002 08:26 pmI really liked what we made for dinner yesterday, and I always forget to write it down in a recipe area, so I'm going to do that here at least.
2 chicken and apple sausages (from Cider Hill)
1 smallish red pepper
1/2 a red onion
some frozen corn
some cut up baby carrots
cook sausages in some oil and garlic (they were uncooked). Remove and cut up. Rinse out pan. In pan, put a bit of oil and onions and garlic, cook for a couple of minutes and then add buckwheat honey (fairly crystallized in this case) to caramelize; also added a bit of chicken broth to help dissolve the honey. Then added all vegetables and sausage and stirfried some more, adding more honey, italian seasonings, allspice, cloves, and a bit of salt. Added apple cider vinegar and some good apple cider (also from cider hill) and stirfried vegetables. Near the end and before scorching, added some more chicken broth to make it saucy. Cooked it a bit more (probably on slightly too high heat, as a lot of the chicken broth boiled off), then let it simmer on very low while waiting for pasta to finish.
While cooking vegetables, cooked about half a box of penne pasta. After it was done, added what seemed to be the right amount of cooked pasta to the vegetable mixture and stirred it around on higher heat until the pasta was coated and the food was hot again.

Besides award-winning cider, they also have great cider doughnuts and apples and other foody things. We stopped in to get some cider the last time we went up to that area, and I decided to get the sausages as well. You should be able to get chicken sausages at Bread and Circus, and maybe even regular food stores these days.
